Could it somehow be added to the main build and then displayed in HomeAssistant as a switch to turn on/off the bluetooth proxy? I'd prefer to just use the default Athom "firmware" sketch and not maintain my own...

You just need to add it in ESPHome sketch and you are all good ;)
